Many people ask if olive oil must be crystal transparent. Normally it is, specially the products selected and for export. They are chosen carefully to project an image that can be out of any discussion. For this purpose, the oil is left to rest during months before bottle or can it.
Anyway, in the Mediterranean region it is possible to buy a fresh olive oil that is murky or misty. It has not rested enough to be transparent, but the taste is wonderful, specially to have it at breakfast with roast bread (and eventually tomato and Serrano ham)
