Description

Andalusian gazpacho is the easiest, healthier and refreshing cold soup of the Mediterranean Diet. Full of vitamins and minerals, is a must in summertime.

Ingredients for the Andalusian Gazpacho
Quantity Unit Ingredient Notes 
For the soup  
800 gr. Home made bread   
80 gr. Green pepper  
 100 gr. Cucumber  
 700 gr. Red tomato  
 2  units Cloves of garlic  
 60  cc. Extra Virgen Olive Oil
 30  cc. Vinegar
 1  Lt. Water
 For the garnish  
 30  gr.  Green pepper
 50  gr.  Cucumber
 50  gr.  Red tomato
 40  gr.  Onion
 75  gr.  Home made bread
 Instructions
1. Put the bread which has been previously soaked in water and drained into a stainless steel dish. Clean the peppers, the cucumbers and the tomatoes. Peel the onion and keep it for the garnish. Remove the pepper seeds, cut them into medium size pieces, except the ones to be used for the garnish. Peel the cucumbers and slice them all except the ones to be used for the garnish. Keep aside the tomato for the garnish and cut the rest into pieces.
2. Add the tomatoes to the bread, the peppers and the previously prepared cucumber. Add the garlic which has already been peeled, and the salt, oil and vinegar. Mix well. Add a bit of water and liquidize in a mixer. Put it through a strainer adding water every once in a while. Add seasoning and allow to cool.
3. For the Garnish, dice the cucumber, tomato, pepper, onion and the bread. Serve on separate dishes.
Notes
Serve very cold. Some people prefer the Andalusian Gazpacho without any bread in the soup. The genuine one has.
